All the snuff and snus I have made in the past let's off a burst of ammonia as soon as I mix in the sodium carbonate.
I have been recently trying to make snus using a slow cooker without a pressure cook. Instead of several hours, several days at about 170F until color and aroma starts to smell like snus. I made a batch several weeks ago and added the alkalizer up front with no ammonia at any point during the cook.
This second batch I waited until about 90hrs of cook time and then added the alkalizer. No ammonia.
I am looking for ideas on what I might be missing.
The pressure cook method I had been happy with except the snus starts to turn to mud after about 20min in my mouth. Slow cooker method seems to hold together way better.
