As a replacement for eggs in baking, just use the liquid from a can of chickpeas. It's sometimes called aquafaba. The link below provides all the info you'll need.


"1 whole egg = 3 tablespoons aquafaba
1 egg white = 2 tablespoons aquafaba"

Scrambled aqua faba

Last night, I drained the liquid from a can of Great Northern Beans into a small bowl. I covered it, and placed the bowl into the refrigerator overnight. Today, I used a whisk to beat the liquid in the bowl, as one might beat an egg, added a little milk, then beat it again. After heating a small frying pan with a bit of olive oil, I poured in the frothy liquid.

It boiled and boiled, and eventually acquired the consistency of gravy, but never solidified like a scrambled egg. There was only about 15 cc of light brown "gravy" left. After allowing it to cool in a fresh bowl, I sampled it with a spoon. The taste was that of a light gravy to which some flour had been added, then lightly browned. It was quite salty, and would have been suitable for spooning over a biscuit.

At some point in the future, I will give the same thing a try using the draining from a can of garbanzos (chick peas).

The future is now!

Aqua faba from garbanzos, with nothing added, makes a delicious gravy. No scrambled egg character to be had.

I refrigerated the drained liquid overnight. After beating it with a wire wisk for over a minute, I poured it into a preheated skillet in which I had melted some margarine. It boiled and boiled and boiled, then thickened to a gravy consistency.

I dumped it over a bowl of freshly toasted, whole wheat croutons. No seasoning needed.

CONCLUSION: While aqua faba is said to work well as a substitute for egg in baked goods, it does not fry like an egg.

I would say buy some chickens but that may be bad advice. I've got 8 hens. All are pets, two are ancient and barley lay anymore. The other six are egg laying monsters about 9.5 months out of the year. When they are laying I can sell a few dozen eggs each month which drops my cost to about $2.50-3 a dozen for what we consume. When they go on strike with the short days of winter and I can't sell any eggs and I'm paying about $8 a dozen to feed my family.

My oldest daughter is a homesteader and has a more sensible approach. She has a few roosters and always has a clutch in the incubator and eats them when they stop laying as they get older. It works for her but it's tough to eat your pets when your civilized city folk and all. Personally chicken grosses me out or I would've eaten all the garden wrecking wretches years ago - my wife likes them though and they are one of the few pets that pull their weight most of the year. If only dogs layed eggs...
