Since you will be starting seed indoors, then transplanting to the ground after the last frost, you need about 60 to 75 days frost-free to produce leaf that matures enough to color-cure well. When you see "days to maturity" listed for a variety, that indicates days from transplant until 50% of the plants have at least one open blossom. Add a few weeks to that, and you are likely to have adequate leaf maturity.
Also, depending on the particular growing year and random conditions, days to maturity may vary by a month from the "average" that is reported. So my suggestion is to try growing whatever variety or varieties might interest you, paying little attention to the "days to maturity". Start your germination 8 weeks prior to your average date of last frost.
You will likely need to configure an artificial setting (rather than just a typical, unheated shed) to color-cure the harvested leaf.
