Just wanted to share my key Lime Pie recipe.


[h=4]Ingredients[/h]
  • 2 ripe Fresh California Avocados, quartered, peeled and seeded
  • ½ cup non-fat vanilla Greek yogurt
  • 1/2 cup light agave nectar
  • 1 lime, zested ½ tsp. vanilla extract
  • ½ cup
  • 1/2 cup light coconut milk
  • ½ cup lime juice
  • 1 envelope unflavored gelatin
  • Graham Cracker Almond Crust (see make-ahead recipe below)
  • Raspberries and light whipped cream, for garnish (optional)

  • ½ cup unsalted, whole roasted almonds
  • 7 whole graham crackers (14) squares
  • 3 Tbsp. granulated sugar
  • ¼ tsp. salt
  • 1 Tbsp. unsalted butter, melted

[h=4]Instructions[/h]
  1. Place avocados in the bowl of a food processor with the yogurt, agave, lime zest and vanilla extract; pulse until well combined. Scrape down the sides of the bowl as necessary. Set aside.
  2. Place the coconut milk in a small saucepan and bring to low boil. Set aside. Place the lime juice in a large bowl. Sprinkle the gelatin over the juice and let stand 1 minute. Gently whisk in the hot coconut milk. Continue to whisk until the gelatin completely dissolves, about 5 minutes. Stir in the avocado mixture until well combined.
  3. Pour the mixture into the prepared pie crust. Carefully transfer to the refrigerator and chill, uncovered, until firm, about 3 hours. Garnish with optional toppings. (Store leftovers in the refrigerator, and cover with plastic wrap.)
Graham Cracker Almond Crust
Instructions

  1. Preheat the oven to 350°F.
  2. Place the almonds in the bowl of a food processor and pulse until coarsely ground. Add the graham crackers, sugar and salt and pulse until finely ground. Add the butter and egg white and pulse until evenly moistened and combined.
  3. Press the crumb mixture firmly on the bottom and up the sides of a 9-inch pie plate. Bake 10 to 12 minutes, or until fragrant and golden. Cool completely before filling.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.

I finally figured out how to make them after eating some from the one and only restaurant here in town taken over by some mexicans. I realized you don't add seasoning but ingredients.

Pinto beans
Bell peppers
jalapeno peppers
onions
diced tomatoes
Cilantra
salt
Tony Chacheros

Soak the beans with 2-3 inches of water for 24-36 hours, drain and rinse.
refill water 2-3 inches over beans and bring to boil and lower heat to simmer.
When beans are tender add all of the above chopped to desired consistency -keep covered
Remove frome heat when bell peppers are soft but not mushy.

Amount of ingredients are up to personal preference.

I will try that recipe BarG. A one restaurant town is the best. We had one, and they made the best CFS. Now it's a liquor store.

Did You mean KFC? If so, I think You tried My best ever rum cake LOL. My KFC recipe is just below. I tried the pie You posted. I didn't have that brand of lime juice, but it came out great. Thanks.

How about a recipe from Sweden for something I hold pretty dear myself ?
We say Raggmunk , you will probably say potato pancake.

I skip the milk and the flour myself , just peel and grate the potatoes and squeeze the starch from them.
You have already cracked an egg or 2 and added some salt + whipped it good in a round plate.
Mix the grated potatoes with the whipped egg ( white an yellow ) , make balls of them if you like and put 1 2 3 in yer fryinpan where the butter has melted.
Take your spatula and press them balls and make'em flat like pancakes , shape them like u want......good things take time
If u use a teflon fryin pan they wount stick in it , but think I prefer a cast ironpan myself.

I think this is very well done and what it should look like when finished , after you fried the pancakes , put them in the oven while u fry the sliced pork.
This goes back a long way over here and ppl can drive miles just be be served Raggmunk's ( I was told today )
This is just fantastic.

Is your salt pork smoked like bacon? I'm trying to figure out if it looks like breakfast, lunch or a light supper. It would do for all.

I love anything with potatoes, that sound great POGreen. Think I may do breakfast for dinner tonight and cook some of those up. Thanks!

Is your salt pork smoked like bacon? I'm trying to figure out if it looks like breakfast, lunch or a light supper. It would do for all.

The salt pork I usually buy is not smoked , but is surley worth a try leverhead.
Just depends on what kinda salt pork u like I reckon.

Thanks! My wife says that she could eat like a Swede and that looked pretty damned good. Are lingonberries tart (sour) or sweet? I may need to make a couple of adjustments for local ingredients.

I looked up lingonberries. Cranberries might make a good substitute.

I thought about cranberries too. I made these tonight and not having any cranberries around (never even heard of lingon berries) I ended up putting a spoonful of homemade peach jam on top. Really good stuff! I guess it's similar to hashbrowns but since its fried in butter and not oil its not all greasy and the bacon/fruit topping adds a very nice sweet & salty element to it. It really was closer to a pancake than hashbrowns. I'll keep this recipe. Pretty quick & easy and a bit different. Two thumbs up.

Glad to hear u seem to like it Baylor , looked up these so called lingonberries and came up with : cowberries
Have heard of hashbrown but never really understood what it was , will look it up.
